I stopped by the “All Akashari Fair” at Kaisen Atom. It’s a special event where all the sushi is made with red vinegar rice (akashari), using a blend of various vinegars developed by the Mizkan Group. For a limited time from Tuesday, June 3rd to Monday, June 16th, every item is served with akashari!

As I walked in, I noticed a sign saying miso soup refills were unlimited.

Today’s soups were shrimp miso and ara (fish scraps) miso. Both were quite tasty. The ara soup even had a generous amount of fish meat in it. I ended up having a bowl of each.

I ordered the Edo-style 5-piece nigiri set: marinated tuna, kombu-marinated sea bass, boiled wild shrimp, gizzard shad, simmered clam, and tamago castella.

Everything was delicious. The akashari was a fantastic touch.
I still had room, so I added a cucumber roll and tuna roll to the order.


The cucumber roll was a surprise hit—perfectly balanced with the red rice. Honestly, a meal of just cucumber rolls and miso soup would be delightfully affordable… just saying.
Oh, and I received a bottle of Mizkan’s tomato-flavored “Kantan-su” vinegar as a gift.
